2 cups graham cracker crumbs

1/2 cup unsalted butter, melted

1/4 cup sugar

1 (8 oz) package cream cheese, softened

1/2 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

2 cups ripe peaches, pitted and diced

1 tablespoon lemon juice

Fresh mint leaves for garnish (optional)

Prepare the crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and sugar. Mix until the crumbs are evenly coated. Press the mixture firmly into the bottom of a 9x9-inch baking dish to form an even layer. Place in the fridge while preparing the filling.

    Make the cream cheese mixture: In a mixing bowl, beat the softened cream cheese and powdered sugar together until smooth. In a separate bowl, whisk the heavy whipping cream and vanilla extract until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until fully combined.
