1 lb ground turkey

1 tbsp olive oil

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) kidney beans, drained and rinsed

1 can (14.5 oz) diced tomatoes

1 tbsp chili powder

1 tsp cumin

1 tsp smoked paprika

½ tsp salt

½ tsp black pepper

1 cup corn (frozen or canned)

4 large whole wheat or spinach tortillas

1 cup shredded lettuce

1 cup diced tomatoes (for topping)

½ cup shredded cheese (cheddar or pepper jack)

½ cup sour cream or Greek yogurt (optional)

Fresh cilantro for garnish (optional)

Instructions
 

Cook the Turkey: In a large skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until softened, about 3-4 minutes.

    Add Turkey: Increase the heat slightly and add the ground turkey to the skillet. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.

      Mix in Spices: Stir in the chili powder, cumin, smoked paprika, salt, and black pepper, ensuring the turkey is well-coated with the spices.

        Add Veggies: Add the kidney beans, diced tomatoes (with their juices), and corn to the skillet. Mix well and bring to a simmer. Let it cook for an additional 5-10 minutes, allowing the flavors to meld. If desired, add a splash of water for a saucier consistency.

          Prepare the Wraps: Lay out the tortillas on a flat surface. Spoon a generous amount of the turkey mixture into the center of each tortilla, leaving room at the edges for folding.
