Ingredients

4 ears of fresh corn, husked

1/4 cup unsalted butter, melted

Zest of 1 lime

Juice of 2 limes

1 teaspoon chili powder

1/2 teaspoon garlic powder

1/2 teaspoon smoked paprika (optional)

1/4 teaspoon cayenne pepper (adjust for heat preference)

Salt, to taste

Fresh cilantro, chopped (for garnish)

Crumbled cotija cheese (optional, for topping)

Lime wedges (for serving)

Instructions

Prepare the Corn: Start by removing the silk and husks from the corn. If desired, you can break the ears in half for easier handling on the grill.

Make the Chili Lime Butter: In a bowl, combine the melted butter, lime zest, lime juice, chili powder, garlic powder, smoked paprika (if using), cayenne pepper, and a pinch of salt. Whisk until well blended.

Preheat the Grill: Set your grill to medium-high heat (about 400°F or 200°C). If using a charcoal grill, ensure the coals are hot and evenly distributed.

Grill the Corn: Place the corn directly on the grill grates. Cook for about 2-3 minutes on each side, turning occasionally, until the corn is charred and tender (approximately 10-15 minutes total).

Baste with the Butter: During the last 5 minutes of grilling, begin basting the corn with the chili lime butter using a brush. Make sure to coat all sides generously, allowing it to caramelize slightly for added flavor.

Serve: Once the corn is grilled to your liking, remove it from the grill. Sprinkle with additional salt, chopped cilantro, and crumbled cotija cheese if desired. Serve with lime wedges on the side for an extra squeeze of fresh lime juice.

Enjoy: Dig into your delicious Chili Lime Grilled Corn while it's hot, savoring the zesty and spicy flavors!
