Chili Cheese Stuffed Peppers

4 large bell peppers (any color)

1 lb ground beef or turkey

1 can (15 oz) chili beans, drained

1 can (15 oz) diced tomatoes with green chilies

1 cup corn kernels (canned or frozen)

1 cup shredded cheddar cheese (plus extra for topping)

1 small onion, diced

2 cloves garlic, minced

1 tsp chili powder

1 tsp cumin

1/2 tsp smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prep the Peppers: Carefully slice the tops off the bell peppers and remove the seeds and membranes. Place them upright in a baking dish and set aside.

      Cook the Beef: In a large skillet over medium heat, add the diced onion and minced garlic. Sauté until the onions become translucent, about 3-4 minutes. Add the ground beef (or turkey) and cook until browned. Drain any excess fat.

        Season the Mixture: Stir in the chili powder, cumin, smoked paprika, salt, and pepper to the meat mixture. Mix until well combined.

          Add the Fillings: Add the chili beans, diced tomatoes, and corn to the skillet. Stir everything together and let it simmer for about 5 minutes to heat through.

            Cheesy Goodness: Remove the skillet from heat and fold in 1 cup of shredded cheddar cheese until melted and evenly distributed.

              Stuff the Peppers: Generously fill each bell pepper with the chili cheese mixture, pressing down slightly to pack it in. Top each pepper with additional shredded cheese.

                Bake: Cover the baking dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is bubbly and golden.

                  Garnish and Serve: Remove the stuffed peppers from the oven and let them cool for a few minutes. Garnish with freshly chopped cilantro and serve with a side of sour cream.
