1 lb ground chicken

1/4 cup soy sauce (low sodium preferred)

2 tbsp honey or maple syrup

1 tbsp rice vinegar

1 tbsp sesame oil

2 cloves garlic, minced

1 tbsp fresh ginger, minced

1/2 cup bell pepper, finely diced (any color)

1/4 cup green onions, sliced (plus extra for garnish)

1 tablespoon sesame seeds (optional)

1 head of butter lettuce or romaine, leaves separated

Prepare Chicken Mixture: In a large skillet over medium heat, add ground chicken. Cook for about 5-7 minutes until browned, breaking it apart with a spatula.

    Make Teriyaki Sauce: In a small bowl, whisk together soy sauce, honey (or maple syrup), rice vinegar, sesame oil, minced garlic, and minced ginger until combined. Set aside.

      Add Veggies: Once the chicken is mostly cooked, add diced bell peppers to the skillet. Stir for another 3 minutes to soften the peppers slightly.
