Chicken Skewers with Lime Salsa

For the Chicken Skewers:

1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons lime juice (freshly squeezed)

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon chili powder (optional for extra heat)

Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

For the Lime Salsa:

1 large ripe avocado, diced

1 cup cherry tomatoes, quartered

1/2 cup red onion, finely chopped

1/2 cup fresh cilantro leaves, chopped

1 jalapeño, seeded and finely chopped (optional, for heat)

3 tablespoons lime juice (freshly squeezed)

Salt and pepper to taste

Marinate the Chicken: In a large bowl, combine the olive oil, lime juice, garlic, cumin, smoked paprika, salt, black pepper, and chili powder (if using). Add the chicken cubes to the marinade and mix well to coat. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 30 minutes, or up to 2 hours for stronger flavor.

    Prepare the Salsa: While the chicken is marinating, prepare the lime salsa. In a separate bowl, gently combine the diced avocado, quartered cherry tomatoes, chopped red onion, cilantro, and jalapeño. Drizzle the lime juice over the mixture, then season with salt and pepper to taste. Toss carefully to avoid mashing the avocado. Set aside.

      Skewer the Chicken: Preheat your grill or grill pan over medium-high heat. Once hot, take the marinated chicken pieces and thread them onto the skewers, leaving a little space between each piece for even cooking (about 4-5 pieces per skewer).
