Chicken Marsala

4 boneless, skinless chicken breasts

1 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon garlic powder

1 teaspoon dried thyme

1/4 cup olive oil

1/4 cup unsalted butter

8 ounces cremini or button mushrooms, sliced

3/4 cup Marsala wine

1 cup chicken broth

2 tablespoons fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions
 

Prepare the Chicken: Place the chicken breasts between two pieces of plastic wrap and pound them to an even 1/2 inch thickness. This will help the chicken cook evenly.

    Season and Dredge: In a shallow dish, mix the flour, salt, pepper, garlic powder, and thyme. Dredge each chicken breast in the flour mixture, shaking off the excess.

      Sauté the Chicken: In a large skillet, heat the olive oil and 2 tablespoons of butter over medium-high heat. Once hot, add the chicken breasts to the skillet. Cook for about 4-5 minutes per side or until golden brown and cooked through. Remove the chicken from the skillet and set aside on a plate.

        Sauté the Mushrooms: In the same skillet, add the remaining butter. Add the sliced mushrooms and sauté for about 5-7 minutes, or until they're browned and tender.

          Deglaze the Pan: Pour the Marsala wine into the skillet, scraping up any browned bits from the bottom. Allow the wine to reduce for about 3-4 minutes.

            Create the Sauce: Add the chicken broth to the skillet and return the chicken to the pan. Simmer for an additional 5 minutes, allowing the flavors to meld and the sauce to thicken slightly.

              Serve: Plate the chicken and spoon the mushroom Marsala sauce over the top. Garnish with freshly chopped parsley and serve with lemon wedges on the side, if desired.
