Chicken Lettuce Wraps with Blueberry Glaze

Ingredients
  

For the Chicken Filling:

1 lb boneless, skinless chicken breast, finely chopped

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 red bell pepper, finely diced

2 green onions, chopped

½ cup carrots, shredded

2 tablespoons soy sauce

1 tablespoon hoisin sauce

1 tablespoon rice vinegar

1 teaspoon sesame oil

Salt and pepper to taste

For the Blueberry Glaze:

1 cup fresh or frozen blueberries

2 tablespoons honey (or maple syrup for a vegan option)

1 tablespoon balsamic vinegar

1 teaspoon cornstarch mixed with 1 tablespoon water (slurry)

A pinch of salt and pepper

For Assembly:

1 head of butter or romaine lettuce, leaves separated and washed

Optional: Chopped cilantro and sliced jalapeños for garnish

Instructions
 

Prepare the Blueberry Glaze:

    - In a small saucepan over medium heat, combine the blueberries, honey, balsamic vinegar, and a pinch of salt and pepper.

      - Cook for about 5-7 minutes, until the blueberries start to burst and release their juices.

        - Stir in the cornstarch slurry and cook for another 1-2 minutes, until the glaze thickens. Remove from heat and set aside.

          Cook the Chicken Filling:

            - In a large skillet or frying pan, heat the olive oil over medium-high heat.

              - Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.

                - Add the finely chopped chicken breast and cook until it’s browned and cooked through, about 5-7 minutes.

                  - Add the diced red bell pepper and shredded carrots. Cook for an additional 3-4 minutes until the vegetables are tender.

                    - Stir in the soy sauce, hoisin sauce, rice vinegar, sesame oil, and season with salt and pepper to taste. Mix well and cook for another minute.

                      Assemble the Wraps:

                        - Take a large lettuce leaf and spoon a generous amount of the chicken filling into the center.

                          - Drizzle a little of the blueberry glaze over the chicken filling.

                            - Garnish with chopped cilantro and sliced jalapeños if desired.

                              - Fold the sides of the lettuce leaf in and enjoy as a wrap!

                                Serve:

                                  - Arrange all wraps on a serving platter, with extra blueberry glaze and chopped toppings on the side for dipping and customizing.
