2 cups cooked, shredded chicken

1 can (15 oz) black beans, drained and rinsed

2 cups corn (fresh or frozen)

1 can (10 oz) red enchilada sauce

1 can (10 oz) diced tomatoes with green chilies

1 small onion, diced

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

2 cups shredded cheddar cheese

8 corn tortillas, cut into triangles

Fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté Aromatics: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the diced onion and sauté for about 5 minutes until soft. Add the minced garlic and cook for an additional minute until fragrant.

      Combine Ingredients: Stir in the shredded chicken, black beans, corn, enchilada sauce, diced tomatoes, cumin, and chili powder. Mix well until everything is combined and heated through, about 5 minutes.

        Layer the Casserole: In a greased 9x13-inch baking dish, start layering. Place a third of the tortilla triangles at the bottom, followed by half the chicken mixture, and then a third of the shredded cheese. Repeat this process one more time.

          Final Layer: Top with the last tortilla triangles, the remaining chicken mixture, and finish with the rest of the cheddar cheese.

            Bake: Cover the casserole with aluminum foil (to prevent sticking, spray the foil with cooking spray). Bake for 25 minutes! Then, remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden.
