1 lb boneless, skinless chicken breasts

6 slices of bacon

1 cup ranch dressing (store-bought or homemade)

1 cup shredded cheddar cheese

1/2 cup chopped green onions (optional)

1 tsp garlic powder

1/2 tsp black pepper

1 package (8 oz) cream cheese, softened

1 tsp paprika

4 large flour tortillas or wraps

Olive oil for frying

Instructions
 

Prepare the Chicken:

    - Preheat your oven to 375°F (190°C).

      - Season the chicken breasts with garlic powder, paprika, and black pepper.

        - In a skillet, cook the bacon over medium heat until crispy. Remove and let it drain on paper towels.

          - In the same skillet, cook the seasoned chicken for about 6-7 minutes per side or until fully cooked (internal temperature of 165°F / 75°C). Once cooked, remove and let it rest for 5 minutes, then shred or dice the chicken into bite-sized pieces.

            Make the Filling:

              - In a large bowl, mix together the shredded chicken, cream cheese, ranch dressing, shredded cheddar cheese, and chopped green onions (if using). Stir until well combined.

                Assemble the Roll-Ups:

                  - Lay a tortilla flat on a clean surface. Spread a generous amount of the chicken filling mixture over the tortilla, leaving about an inch of space at the edges.

                    - Crumble the crispy bacon over the filling.

                      - Roll it tightly from one end to the other, ensuring it’s well-sealed. Repeat with the remaining tortillas.

                        Cook the Roll-Ups:

                          - In a large skillet, heat a little olive oil over medium heat.

                            - Carefully place the roll-ups seam-side down in the skillet. Cook for 2-3 minutes on each side, or until they’re golden brown and crispy.

                              - If desired, you can also place them in the preheated oven for 5-7 minutes for an extra crispy finish.

                                Slice and Serve:

                                  - Once the roll-ups are cooked, remove them from the skillet. Let them cool slightly before slicing them into pinwheels or halves. Serve warm with additional ranch dressing on the side for dipping.
