Ingredients

2 cups rolled oats

1 cup creamy peanut butter (or almond butter for a nut-free version)

½ cup honey or maple syrup

½ cup brown sugar (packed for extra chewiness)

1 teaspoon vanilla extract

½ cup mini chocolate chips (optional, or substitute with dried fruit)

½ cup chopped nuts or seeds (e.g., almonds, walnuts, sunflower seeds)

Pinch of salt

Instructions

Prepare the Pan: Line an 8x8 inch baking dish with parchment paper, leaving some overhang on the sides for easy removal later. Set aside.

Mix Wet Ingredients: In a medium saucepan over low heat, combine the creamy peanut butter, honey (or maple syrup), and brown sugar. Stir frequently until the mixture is well combined and slightly warmed, allowing the sugar to dissolve.

Add Vanilla: Remove the saucepan from the heat and stir in the vanilla extract and a pinch of salt.

Combine with Oats: In a large mixing bowl, add the rolled oats and any optional ingredients like chocolate chips, nuts, or dried fruit. Pour the warm peanut butter mixture over the oats.

Mix Thoroughly: Using a spatula or your hands (greased or damp for easier handling), mix everything together until the oats are fully coated and evenly mixed.

Press into Pan: Transfer the mixture to the prepared baking dish. Press down firmly and evenly using your hands or a flat spatula, ensuring it’s compact.

Chill: Refrigerate the granola squares for at least 1 hour, or until firm. This will help them hold their shape when cut.

Cut and Serve: Once set, lift the granola out of the pan using the parchment overhang. Place it on a cutting board and slice into squares or bars of your preferred size.

Store: Store any leftovers in an airtight container at room temperature for up to a week, or in the fridge for a longer shelf life.
