4 boneless, skinless chicken breasts

Salt and black pepper, to taste

2 tablespoons olive oil

1 cup fresh or frozen cherries, pitted

1/2 cup chicken broth

1/4 cup balsamic vinegar

3 tablespoons honey

2 cloves garlic, minced

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

1 tablespoon cornstarch mixed with 2 tablespoons water (optional, for thickening)

Fresh parsley, chopped, for garnish

Prepare the Chicken: Season the chicken breasts generously with salt and black pepper on both sides.

    Sear the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and sear for about 5-7 minutes on each side, or until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
