4 medium zucchinis, thinly sliced

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

2 large eggs, beaten

1/2 cup chopped onion

2 cloves garlic, minced

1 cup breadcrumbs (preferably whole wheat)

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley for garnish (optional)

Instructions
 

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Prepare Zucchini: In a large bowl, toss the sliced zucchini with a little salt and let it sit for about 10 minutes. This will help extract excess moisture. After 10 minutes, pat the zucchini dry with paper towels to remove any excess liquid.

      Sauté Onions and Garlic: In a skillet over medium heat, add olive oil. Once hot, sauté the chopped onion and minced garlic until translucent, about 3-4 minutes. Remove from heat and let cool slightly.

        Mix the Cheese Filling: In a large mixing bowl, combine the ricotta cheese, half of the cheddar cheese, half of the mozzarella cheese, grated Parmesan cheese, beaten eggs, oregano, basil, salt, and pepper. Mix until well combined.

          Layer the Ingredients: In a greased 9x13 inch baking dish, layer half of the zucchini slices evenly at the bottom. Spread half of the cheese mixture on top of the zucchini, then add half of the sautéed onion and garlic. Repeat this layering process with the remaining zucchini, cheese mixture, and onion-garlic mix.

            Top with Breadcrumbs: Sprinkle the remaining cheddar and mozzarella cheese on top of the casserole, followed by an even layer of breadcrumbs for a crispy finish.

              Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and bubbly.
