Ingredients

4 large Russet potatoes

1 lb ground beef (or turkey, for a lighter option)

1 packet taco seasoning mix

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 cup sour cream

1 cup salsa (mild or spicy, according to preference)

1 can black beans, rinsed and drained

1 cup corn (frozen or canned)

1 jalapeño, sliced (optional for heat)

Fresh cilantro, chopped (for garnish)

Olive oil

Salt and pepper to taste

Instructions

Preheat the Oven: Begin by preheating your oven to 425°F (220°C). Meanwhile, wash and scrub the potatoes clean.

Slice the Potatoes: Cut the potatoes into thin, even rounds (about ¼ inch thick). You can use a mandoline for uniform slices if desired.

Parbake the Potato Slices: On a baking sheet, spread the potato slices in a single layer. Drizzle with olive oil and sprinkle with salt and pepper. Bake in the preheated oven for 20 minutes, flipping halfway through, until they are just starting to get tender but aren’t fully cooked.

Cook the Meat: While the potatoes are baking, heat a skillet over medium heat. Add the ground beef (or turkey) and cook until browned. Drain excess fat, then stir in the taco seasoning mix with a splash of water as instructed on the packet; simmer for about 5 minutes until the mixture is well combined and heated through.

Layer the Stacks: Once the potatoes are done parbaking, remove them from the oven. Start layering in a baking dish:

            - Place a potato slice at the base, add a spoonful of the taco meat, a sprinkle of cheddar cheese, some black beans, corn, and a slice of jalapeño if using.

              - Repeat the layers, stacking another potato slice on top, alternating with meat and cheese until you reach the top, finishing with a final layer of cheese.

Bake to Perfection: Cover the baking dish with aluminum foil and return it to the oven. Bake for 25 minutes, then remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

Serve: Once baked, remove the cheesy taco potato stacks from the oven. Drizzle sour cream and salsa over each stack, and garnish with freshly chopped cilantro.

Enjoy: Serve hot, and watch them disappear as your guests dive into these deliciously cheesy stacks!
