4 large russet potatoes, peeled and thinly sliced

2 tablespoons butter

1 medium onion, finely chopped

3 cloves garlic, minced

2 cups heavy cream

1 cup milk

2 cups shredded sharp cheddar cheese

1 cup grated Parmesan cheese

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

1 teaspoon salt

½ teaspoon black pepper

½ teaspoon paprika (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Set your oven to 375°F (190°C).

    Sauté the Onions and Garlic: In a large skillet over medium heat, melt the butter. Add the chopped onions and cook until they become translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant. Remove from heat.

      Prepare the Cream Mixture: In a large mixing bowl, combine the heavy cream, milk, fresh thyme, salt, and black pepper. Whisk until well combined.

        Layer the Potatoes: In a greased 9x13 inch baking dish, arrange a layer of sliced potatoes evenly at the bottom. Sprinkle a portion of the sautéed onions and garlic on top, followed by a generous layer of cheddar cheese. Repeat this layering process until all potatoes, onions, garlic, and cheese are used, finishing with a layer of potatoes topped with cream mixture.

          Add Cream Mixture: Pour the cream mixture over the top layer of potatoes. Make sure all the potatoes are submerged in the creamy goodness.
