Ingredients

2 cups fresh corn kernels (you can use frozen if necessary)

1 medium onion, diced

2 cloves garlic, minced

1 to 3 jalapeños, finely chopped (adjust based on your spice preference)

1 cup cream cheese, softened

1 cup shredded sharp cheddar cheese

1/2 cup shredded Monterey Jack cheese

1/4 cup milk

2 tablespoons olive oil

1 teaspoon smoked paprika

Salt and pepper, to taste

Fresh cilantro, for garnish (optional)

Instructions

Prepare the Skillet:

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 4-5 minutes until soft and translucent.

      Add Garlic & Jalapeños:

Stir in the minced garlic and chopped jalapeños. Sauté for an additional 2-3 minutes until the garlic is fragrant and the jalapeños are slightly softened.

          Incorporate the Corn:

Add the corn kernels to the skillet. Stir well to combine and cook for 3-4 minutes until the corn is heated through and begins to caramelize slightly.

              Make it Cheesy:

Lower the heat to medium-low. Add the cream cheese, shredded cheddar, and Monterey Jack cheese to the skillet. Pour in the milk to help create a creamy sauce. Stir continuously until all the cheeses have melted and everything is smoothly combined.

                  Add Seasoning:

Sprinkle in the smoked paprika, salt, and pepper. Mix well to ensure all flavors are evenly distributed. Continue to cook for another 2-3 minutes, allowing everything to meld together.

                      Serve:

Once your cheesy jalapeño corn skillet is creamy and bubbling, remove it from the heat. Garnish with fresh cilantro if desired, and serve warm as a delicious side dish or appetizer!
