2 tablespoons olive oil

1 onion, chopped

3 cloves garlic, minced

1 can (15 ounces) diced tomatoes, drained

1 can (4 ounces) diced green Hatch chiles (or to taste)

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup sour cream

2 cups shredded cheddar cheese, divided

1 cup mozzarella cheese, shredded

1/4 cup fresh cilantro, chopped (for garnish)

1/2 cup breadcrumbs (optional)

Instructions
 

Cook the Pasta: Preheat your oven to 375°F (190°C). Bring a large pot of salted water to a boil. Add the penne pasta and cook according to package instructions until al dente. Drain and set aside.

    Sauté the Aromatics: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and sauté for about 4-5 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add the Sauces and Spices: Stir in the drained diced tomatoes, Hatch chiles, ground cumin, smoked paprika, salt, and black pepper. Cook for another 5 minutes, allowing the flavors to meld together.
