Cheesy Ground Turkey Enchilada Bake

Ingredients
  

1 lb ground turkey

1 small onion, diced

2 cloves garlic, minced

1 can (15 oz) black beans, drained and rinsed

1 can (10 oz) diced tomatoes with green chilies

1 can (10 oz) enchilada sauce (red or green, your choice)

1 ½ cups corn (frozen or canned)

2 cups shredded cheese (cheddar and Monterey Jack blend recommended)

8 medium flour tortillas

1 tsp ground cumin

1 tsp chili powder

½ tsp smoked paprika

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Sour cream, for serving (optional)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large skillet, heat a tablespoon of oil over medium heat. Add the diced onion and sauté for 3-4 minutes until translucent.

      Add the garlic and ground turkey to the skillet. Cook, breaking it apart with a spatula, until the turkey is browned and cooked through, about 5-7 minutes. Season with salt, pepper, cumin, chili powder, and smoked paprika.

        Stir in black beans, diced tomatoes, and corn, cooking for an additional 2-3 minutes until everything is heated through.

          Pour half of the enchilada sauce into the bottom of a 9x13 inch baking dish. Spread it evenly to coat the bottom.

            Layer 4 tortillas on top of the sauce, overlapping slightly if needed. Spoon half of the turkey mixture over the tortillas followed by a sprinkle of cheese (about 1 cup).

              Repeat the layering process with the remaining tortillas, turkey mixture, and another cup of cheese. Once you finish layering, pour the rest of the enchilada sauce on top and sprinkle the remaining cheese over it.

                Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

                  Once out of the oven, let it cool for a few minutes. Garnish with fresh cilantro, if desired.

                    Serve warm with sour cream and enjoy your cheesy ground turkey enchilada bake!
