Cheesy French Onion Crockpot Potatoes

3 lbs Yukon gold potatoes, peeled and sliced into 1/4-inch rounds

2 large onions, thinly sliced

4 cloves garlic, minced

1 cup beef broth (or vegetable broth for a vegetarian option)

1 cup heavy cream

2 cups shredded Gruyère cheese (reserve 1/2 cup for topping)

1 cup shredded mozzarella cheese

1 teaspoon dried thyme

1 teaspoon dried rosemary

1 teaspoon salt (or to taste)

1/2 teaspoon black pepper

2 tablespoons butter, cut into small pieces

Fresh parsley, chopped (for garnish)

Instructions
 

Prepare the Potatoes: Begin by peeling and slicing the Yukon gold potatoes into 1/4-inch rounds. Set aside.

    Cook the Onions: In a skillet over medium heat, add a tablespoon of olive oil. Add the thinly sliced onions and cook until they are golden brown and caramelized, about 15-20 minutes. Stir occasionally to avoid burning. Once caramelized, add the minced garlic and cook for another minute.

      Layer in the Crockpot: In the bottom of a large crockpot, layer half of the potato slices. Sprinkle with half of the caramelized onion mixture, and season with thyme, rosemary, salt, and pepper. Pour half of the broth and cream mixture over this layer.

        Repeat Layers: Add the remaining potato slices on top, followed by the second half of the caramelized onion mixture. Pour any remaining broth and cream mixture evenly over the top. Dot the top with the small pieces of butter.

          Add Cheese: Sprinkle the mozzarella cheese on top of the final layer of potatoes. Reserve the Gruyère cheese for later.

            Cook: Cover the crockpot and cook on low for 6-8 hours, or on high for 3-4 hours, until the potatoes are tender and easily pierced with a fork.

              Finish with Cheese: About 15 minutes before serving, sprinkle the reserved Gruyère cheese over the top of the potatoes. Cover and allow the cheese to melt.

                Serve: Once the cheese is melted and bubbly, garnish with chopped fresh parsley before serving. Enjoy your creamy, cheesy creation!
