Ingredients

1 cup fresh corn kernels (or sweet canned corn, drained)

1 cup all-purpose flour

1/2 cup shredded sharp cheddar cheese

1/4 cup grated Parmesan cheese

1/4 teaspoon baking powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika (optional)

1/4 cup chopped fresh chives or green onions

2 large eggs

1/2 cup milk

Oil for frying

Instructions

Prepare the Batter: In a large mixing bowl, combine the flour, baking powder, salt, black pepper, and paprika (if using). Mix well to ensure even distribution of the dry ingredients.

Add the Cheese and Corn: Stir in the shredded cheddar cheese, grated Parmesan, corn kernels, and chopped chives or green onions until everything is well coated with the flour mixture.

Mix the Wet Ingredients: In a separate bowl, whisk together the eggs and milk until fully combined.

Combine Wet and Dry: Pour the wet mixture into the bowl with the dry ingredients and gently fold until just combined. Be careful not to overmix; a few lumps are okay.

Heat the Oil: In a large skillet or frying pan, pour in enough oil to cover the bottom of the pan (about 1/4 inch). Heat over medium heat until the oil is hot but not smoking.

Fry the Fritters: Drop spoonfuls of the batter (about 2 tablespoons each) into the hot oil, spacing them out to avoid crowding. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy.

Drain Excess Oil: Remove the fritters from the skillet and place them on a plate lined with paper towels to absorb any excess oil.

Serve: Serve warm with a dipping sauce of your choice, such as sour cream, salsa, or a zesty yogurt sauce. Enjoy your cheesy corn fritters fresh for the best texture!
