Cheesy Chili Zucchini Fritters

2 medium zucchinis, grated

1 teaspoon salt (for draining zucchini)

1 cup shredded cheddar cheese

1/2 cup crumbled feta cheese

1/2 cup all-purpose flour (or almond flour for a gluten-free option)

2 large eggs, beaten

1/4 cup finely chopped red onion

1 small jalapeño, finely chopped (seeds removed for less heat)

2 cloves garlic, minced

1 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon black pepper

1/4 teaspoon paprika

Fresh cilantro or parsley, for garnish

Prepare the Zucchini: Place the grated zucchini in a clean kitchen towel or cheesecloth and sprinkle with salt. Let it sit for about 10-15 minutes to draw out excess moisture. Squeeze the towel to drain the liquid and set the zucchini aside.

    Mix the Batter: In a mixing bowl, combine the drained zucchini, shredded cheddar cheese, crumbled feta, flour, beaten eggs, chopped red onion, jalapeño, minced garlic, chili powder, cumin, black pepper, and paprika. Stir until all ingredients are well incorporated.

      Heat the Oil: In a large skillet, heat about 1 tablespoon of olive oil over medium heat. You may need to add more oil as you cook the fritters, so keep some on hand.

        Form the Fritters: Using a spoon or your hands, scoop about 2-3 tablespoons of the mixture and shape it into a patty about 1/2-inch thick. Place the patty gently in the hot skillet. Repeat until the skillet is comfortably filled (but not overcrowded).
