Cheesy Broccoli and Rice Casserole

2 cups fresh broccoli florets

1 cup uncooked white rice

3 cups vegetable broth (or chicken broth)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup cream of mushroom soup (or homemade)

1/2 cup milk

1/4 cup grated Parmesan cheese

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon salt (or to taste)

1/4 teaspoon black pepper

1/2 teaspoon paprika (for garnishing)

Cooking spray or butter (for greasing the casserole dish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Rice: In a medium saucepan, combine the uncooked rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is tender and the liquid is absorbed. Remove from heat and set aside.

      Prepare the Broccoli: While the rice is cooking, bring a small pot of water to a boil. Add the broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and rinse under cold water to stop the cooking process. Set aside.

        Sauté the Aromatics: In a skillet, heat a tablespoon of oil or butter over medium heat. Add the chopped onion and sauté for about 4-5 minutes until soft and translucent. Add the minced garlic and cook for another minute until fragrant. Remove from heat.

          Combine Ingredients: In a large mixing bowl, combine the cooked rice, blanched broccoli, sautéed onion and garlic, cream of mushroom soup, milk, sharp cheddar cheese, mozzarella cheese, onion powder, garlic powder, salt, and black pepper. Mix until well combined.

            Transfer to Casserole Dish: Lightly grease a 9x13-inch casserole dish with cooking spray or butter. Pour the mixture into the dish, spreading it evenly. Sprinkle the grated Parmesan cheese on top for extra flavor and a nice crust.

              Bake the Casserole: Cover the casserole with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, uncover and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.

                Garnish and Serve: Remove from the oven and let it cool for a few minutes. Sprinkle paprika on top for added color. Serve warm as a hearty side dish or as a main dish!
