Cheesy Baked Cauliflower Bites

1 medium head of cauliflower, cut into bite-sized florets

1 cup shredded sharp cheddar cheese

1/2 cup grated Parmesan cheese

1/2 cup breadcrumbs (panko for extra crunch)

2 large eggs

1/4 cup mayonnaise

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large mixing bowl, toss the cauliflower florets with olive oil, salt, and pepper until they are evenly coated.

      Make the Cheese Mixture: In a separate bowl, combine the shredded cheddar cheese, grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, smoked paprika, and a pinch of salt and pepper. Mix well.

        Combine Eggs and Mayo: In another small bowl, whisk together the eggs and mayonnaise until smooth.
