2 lbs (900g) Yukon Gold potatoes, thinly sliced

2 cups shredded sharp cheddar cheese

1 cup grated Gruyère cheese

4 tablespoons unsalted butter

3 tablespoons all-purpose flour

2 cups whole milk

1 cup heavy cream

2 cloves garlic, minced

1 teaspoon fresh thyme (or ½ teaspoon dried)

1 teaspoon salt

½ teaspoon black pepper

Pinch of nutmeg

½ cup grated Parmesan cheese (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Prep the Oven and Baking Dish: Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish with butter or non-stick spray.

    Prepare the Potatoes: Wash and peel the Yukon Gold potatoes. Using a mandoline or sharp knife, slice the potatoes into thin rounds (about 1/8 inch thick) for even cooking.

      Make the Cheese Sauce:

        - In a medium saucepan over medium heat, melt the butter.

          - Add the minced garlic and sauté for about 1 minute until fragrant (do not let it brown).

            - Sprinkle in the flour and whisk continuously for about 2 minutes until it forms a roux.

              - Gradually pour in the milk and heavy cream while whisking to avoid lumps. Stir until the mixture thickens, about 3-5 minutes.

                - Lower the heat and add the sharp cheddar, Gruyère cheese, thyme, salt, pepper, and nutmeg, stirring until the cheeses melt and the sauce is smooth.

                  Assemble the Dish: Layer half of the sliced potatoes evenly in the bottom of the prepared baking dish. Pour half of the cheese sauce over the potatoes. Repeat with the remaining potatoes and cheese sauce.

                    Add a Crunchy Topping: Sprinkle the grated Parmesan cheese evenly over the top layer. This will create a delicious, crispy crust during baking.

                      Bake: Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 25-30 minutes or until the top is golden and bubbly and the potatoes are tender when pierced with a knife.

                        Rest and Garnish: Once baked, remove the dish from the oven and let it rest for 10 minutes. Garnish with freshly chopped parsley before serving.
