Ingredients

4 boneless, skinless chicken breasts

1 cup shredded sharp cheddar cheese

1 cup all-purpose flour

2 large eggs

1 cup Italian-style breadcrumbs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce (store-bought or homemade)

1/4 cup fresh basil, chopped (optional, for garnish)

Olive oil for frying

Grated Parmesan cheese, for topping

Instructions

Prepare the Chicken: Preheat your oven to 375°F (190°C). Place each chicken breast between two pieces of parchment paper or plastic wrap. Using a meat mallet or rolling pin, pound the chicken to about 1/2 inch thickness.

Stuff the Chicken: Divide the shredded cheddar cheese evenly among the chicken breasts, placing it on one side. Roll each breast tightly from the cheese-filled side to the opposite edge, creating a roll. Secure each roll with toothpicks or kitchen twine if necessary.

Set Up a Breading Station: In three separate shallow dishes, place the flour in one, beat the eggs in the second, and combine the breadcrumbs, garlic powder, onion powder, Italian seasoning, salt, and black pepper in the third.

Coat the Chicken Rolls: Dip each chicken roll first in the flour, shaking off excess, then in the beaten eggs, and finally into the breadcrumb mixture. Ensure each roll is well-coated.

Pan-Fry the Rolls: In a large skillet, heat about 2 tablespoons of olive oil over medium heat. Once hot, add the chicken rolls (in batches if necessary) and cook for about 3-4 minutes on each side, or until golden brown. Transfer to a baking dish once done.

Add Marinara Sauce: Pour marinara sauce evenly over the fried chicken rolls in the baking dish. Sprinkle grated Parmesan cheese on top for added flavor.

Bake: Place the baking dish in the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/74°C).

Serve: Once out of the oven, allow the roll-ups to rest for 5 minutes. Carefully remove toothpicks or twine and garnish with fresh basil if using. Serve with additional marinara sauce and your favorite sides such as pasta or a simple salad.
