1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) rotini or penne pasta

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 bell pepper (red or green), diced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) kidney beans, drained and rinsed

1 cup chicken broth

2 tablespoons chili powder

1 teaspoon ground cumin

½ teaspoon smoked paprika

Salt and pepper, to taste

1 cup shredded sharp Cheddar cheese

Fresh cilantro or parsley, chopped (for garnish)

1 jalapeño, sliced (optional, for extra heat)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and set aside.

    Brown the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the chicken pieces, seasoning them with salt and pepper. Cook until golden brown on all sides, about 5-7 minutes. Remove the cooked chicken from the pan and set aside.

      Sauté the Vegetables: In the same skillet, add the diced onion and bell pepper. Sauté for about 3-4 minutes until softened. Stir in the garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Return the chicken to the skillet. Stir in the diced tomatoes (with juice), kidney beans, chicken broth, chili powder, cumin, smoked paprika, and the cooked pasta. Mix everything well to combine.

          Simmer: Bring the mixture to a simmer over medium heat. Cook for about 5-10 minutes, allowing the flavors to meld and the sauce to thicken slightly. If the skillet seems too dry, add a little more chicken broth as needed.

            Add Cheese: When the pasta is heated through, sprinkle the shredded Cheddar cheese over the top. Cover the skillet and let it sit for about 2-3 minutes, or until the cheese is melty and gooey.

              Garnish and Serve: Remove from heat and garnish with freshly chopped cilantro or parsley. If desired, add sliced jalapeños for extra heat. Serve hot and enjoy!
