Charcuterie Board Breakfast Muffins

1 ½ cups all-purpose flour

2 tsp baking powder

½ tsp baking soda

½ tsp salt

½ cup cooked and crumbled bacon

½ cup diced smoked turkey or ham

½ cup shredded cheddar cheese

¼ cup crumbled goat cheese

⅓ cup chopped sundried tomatoes

3 large eggs

¾ cup buttermilk

¼ cup olive oil

1 tsp Dijon mustard

2 tbsp fresh rosemary, chopped (or 1 tbsp dried)

Freshly cracked black pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Line a muffin tin with parchment liners or spray with non-stick cooking spray.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

      Combine Meats and Cheeses: In another bowl, mix the crumbled bacon, diced turkey or ham, shredded cheddar, goat cheese, and sundried tomatoes. Make sure everything is evenly distributed.

        Prepare Wet Ingredients: In a separate bowl, whisk together the eggs, buttermilk, olive oil, Dijon mustard, chopped rosemary, and black pepper until smooth.

          Combine Mixtures: Pour the wet ingredients into the dry ingredients. Gently stir until just combined; be careful not to overmix. Then, fold in the meat and cheese mixture until it's evenly distributed throughout the batter.

            Fill Muffin Tins: Divide the muffin batter evenly among the 12 muffin cups, filling each about ¾ full.

              Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Remove from the oven and let the muffins cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
