Ingredients

1 cup rolled oats

1/2 cup finely grated carrots (approximately 1 medium carrot)

1/2 cup almond butter (or any nut butter of your choice)

1/4 cup honey or maple syrup

1/4 cup chopped walnuts or pecans

1/4 cup shredded coconut (unsweetened)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon salt

Optional: 1/4 cup raisins or cranberries for added sweetness

Instructions

Prepare Your Work Surface: Gather all the ingredients in a clean workspace and set a medium-sized mixing bowl in front of you.

Mix the Wet Ingredients: In the mixing bowl, combine the almond butter, honey (or maple syrup), and vanilla extract. Stir these ingredients together until the mixture is smooth and well combined.

Add the Dry Ingredients: Next, add the rolled oats, grated carrots, chopped walnuts or pecans, shredded coconut, ground cinnamon, ground nutmeg, and salt into the bowl. If you're using raisins or cranberries, fold them in now.

Combine Everything: Using a spatula or your hands, mix everything together thoroughly until the ingredients are evenly incorporated. The mixture should be sticky but manageable. If the mixture is too dry, consider adding a splash of water or more nut butter.

Form the Energy Balls: With clean hands, take about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture has been shaped into balls.

Chill: Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.

Store: Once chilled, transfer the energy balls to an airtight container. They can be stored in the fridge for up to one week or in the freezer for up to three months.
