1 cup rolled oats

½ cup almond flour

½ cup shredded carrots (about 1 large carrot)

½ cup pitted dates (soaked in warm water if hard)

¼ cup almond butter (or any nut/seed butter)

¼ cup maple syrup (or honey)

1 teaspoon vanilla extract

½ teaspoon ground cinnamon

¼ teaspoon ground nutmeg

¼ teaspoon salt

¼ cup chopped walnuts (optional)

¼ cup raisins (optional)

Unsweetened shredded coconut for rolling (optional)

Instructions
 

Prepare the Dates: If your dates are hard, soak them in warm water for about 10-15 minutes until they become soft. Drain well before using.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, almond flour, ground cinnamon, ground nutmeg, and salt. Stir until well combined.

      Blend the Wet Ingredients: In a food processor, add the soaked dates, shredded carrots, almond butter, maple syrup, and vanilla extract. Blend until smooth and creamy. You might need to scrape down the sides a couple of times to ensure everything is mixed well.

        Combine Wet and Dry: Pour the date mixture into the bowl with the dry ingredients. Stir until everything is well combined. If using, fold in the chopped walnuts and raisins.

          Form the Balls: Using your hands, take a tablespoon of the mixture and roll it into a ball. If you prefer, you can roll the balls in shredded coconut for an extra layer of flavor and texture.

            Chill: Place the energy balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to firm up.
