2 cups all-purpose flour

2 cups grated carrots (about 4 medium carrots)

1 cup granulated sugar

1 cup packed brown sugar

1 cup vegetable oil

4 large eggs

1 teaspoon vanilla extract

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon salt

1 cup chopped walnuts or pecans (optional)

1 cup raisins or crushed pineapple (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a 9x13 inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.

      Mix the Wet Ingredients: In a large mixing bowl, combine the granulated sugar, brown sugar, and vegetable oil. Use an electric mixer on medium speed to beat until well combined. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

        Incorporate the Carrots: Gradually add the dry ingredient mixture to the wet mixture, mixing until just combined. Be careful not to overmix. Fold in the grated carrots, nuts, and raisins or crushed pineapple if you’re using them.

          Bake the Bars: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean (a few moist crumbs are okay).

            Cool: Remove from the oven and let it cool in the pan for about 10 minutes. Then, using the parchment paper, lift the cake out of the pan and place it on a wire rack to cool completely.

              Slice and Serve: Once fully cooled, slice the carrot cake into bars. Serve as is or frost with cream cheese icing for an extra touch of indulgence!
