Ingredients
  

1 cup popcorn kernels (or 1 bag of microwave popcorn)

1 cup unsalted butter

2 cups brown sugar (packed)

1/2 cup corn syrup (light)

1 teaspoon vanilla extract

1/2 teaspoon baking soda

1/2 teaspoon salt

Optional: 1 cup nuts (like pecans or almonds), or a sprinkle of sea salt for finishing

Instructions
 

Pop the Popcorn:

    - If you're using popcorn kernels, pop them using an air popper or in a large pot with a bit of oil, until you have about 12 cups of popped popcorn. If using microwave popcorn, simply pop as per package instructions.

      Prepare the Caramel Sauce:

        - In a large saucepan, melt the unsalted butter over medium heat.

          - Add the brown sugar and corn syrup. Stir until the mixture comes to a boil, then stop stirring and let it boil for about 4-5 minutes without stirring.

            - Remove the saucepan from heat and quickly stir in the vanilla extract, baking soda, and salt. Be careful, as the mixture will bubble up.

              Combine the Popcorn and Caramel:

                - In a large mixing bowl, place the popped popcorn. Pour the hot caramel sauce over the popcorn, stirring gently to coat every piece thoroughly. If you’re adding nuts, mix them in at this stage too.

                  Bake for Crunchiness:

                    - Preheat your oven to 250°F (120°C).

                      - Spread the caramel-coated popcorn onto a large baking sheet lined with parchment paper. Make sure it’s in an even layer.

                        - Bake in the preheated oven for about 1 hour, stirring every 15 minutes to ensure even coating and to prevent burning.

                          Cool and Store:

                            - Once baked, remove from the oven and let the popcorn cool completely on the baking sheet. It will harden as it cools.

                              - Break the popcorn into clusters, if desired, and store them in an airtight container.
