Ingredients

1 cup (150g) graham cracker crumbs

1 cup (90g) crispy rice cereal

1/2 cup (100g) unsalted butter

1 cup (200g) granulated sugar

1/2 cup (120ml) light corn syrup

1 cup (240ml) sweetened condensed milk

2 cups (340g) semi-sweet chocolate chips

1 cup (150g) caramel bits

1/2 teaspoon vanilla extract

1/4 teaspoon salt

Instructions

Prepare the Pan: Line a 9x9 inch (23x23 cm) square baking pan with parchment paper, leaving some overhang for easy removal later. Lightly grease the paper with cooking spray.

Make the Base: In a medium-sized mixing bowl, combine the graham cracker crumbs and crispy rice cereal. In a small saucepan, melt the butter over low heat. Once melted, pour the butter into the crumb mixture. Stir until fully incorporated. Press this mixture firmly into the bottom of the prepared baking pan to form an even layer.

Cook the Caramel Layer: In another saucepan, combine the sugar, corn syrup, and condensed milk over medium heat. Stir occasionally until the mixture starts to boil. Allow it to boil gently for about 5–7 minutes without stirring, until it thickens slightly and turns a light caramel color.

Add Flavor: Remove the caramel mixture from the heat and stir in the salt and vanilla extract. Pour this caramel layer over the graham cracker base, spreading it evenly. Let it cool for about 10–15 minutes until it sets slightly.

Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and caramel bits. Heat in the microwave in 30-second intervals, stirring in between, until the mixture is smooth and fully melted (about 1.5–2 minutes total).

Assemble the Bars: Pour the melted chocolate over the caramel layer in the baking pan, using a spatula to spread it out evenly across the surface. Gently tap the pan on the counter to remove air bubbles and ensure an even layer.

Chill and Set: Refrigerate the bars for at least 2 hours, or until fully set and firm to the touch.

Cut into Bars: Once set, use the overhanging parchment paper to lift the bars out of the pan. Place on a cutting board and cut into squares or rectangles.

Serve and Enjoy: You can store the bars in an airtight container in the fridge for up to two weeks. Enjoy them chilled or at room temperature!
