4 medium zucchinis (spiralized into zoodles)

1 ½ cups cherry tomatoes, halved

1 cup fresh mozzarella balls (bocconcini), sliced in half

½ cup fresh basil leaves, torn

3 tablespoons extra virgin olive oil

2 tablespoons balsamic vinegar

1 clove garlic, minced

Salt and pepper to taste

¼ teaspoon red pepper flakes (optional, for a kick)

Prepare the Zoodles: Start by spiralizing the zucchinis into noodles using a spiralizer. If you don't have one, you can use a vegetable peeler to create long ribbons or a grater for thin strips. Place the zoodles in a colander, sprinkle with a little salt, and let them sit for about 15 minutes to drain excess moisture.
