Caprese Stuffed Portobello Mushrooms

4 large Portobello mushrooms, stems removed

2 cups cherry tomatoes, halved

8 oz fresh mozzarella, diced

1/4 cup fresh basil leaves, chopped

2 tablespoons balsamic vinegar

3 tablespoons olive oil

3 cloves garlic, minced

Salt and freshly ground black pepper to taste

1/2 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese (for topping)

Instructions
 

Preheat your oven to 375°F (190°C).

    Prep the mushrooms: Clean the Portobello mushrooms with a damp cloth to remove any dirt, and place them gill-side up on a baking sheet lined with parchment paper. Brush them with 1 tablespoon of olive oil and season generously with salt and black pepper.

      Make the filling: In a medium bowl, combine the halved cherry tomatoes, diced mozzarella, chopped basil, balsamic vinegar, minced garlic, the remaining 2 tablespoons of olive oil, salt, pepper, and red pepper flakes (if using). Toss everything together until well mixed.

        Stuff the mushrooms: Divide the Caprese filling evenly among the prepared Portobello mushrooms, allowing the mixture to mound up slightly in the center.

          Top with Parmesan: Sprinkle the grated Parmesan cheese evenly over the stuffed mushrooms for an extra cheesy flavor.

            Bake: Place the baking sheet in the preheated oven and bake the mushrooms for about 20-25 minutes, or until the mushrooms are tender and the cheese is bubbling and slightly golden.

              Serve: Once done, remove the mushrooms from the oven and let them cool for a couple of minutes. Drizzle with additional balsamic vinegar and garnish with extra fresh basil leaves if desired.
