8 oz fettuccine pasta

1 lb large shrimp, peeled and deveined

1 tablespoon olive oil

1 tablespoon Cajun seasoning (homemade or store-bought)

1 medium onion, chopped

4 cloves garlic, minced

1 red bell pepper, sliced

1 cup heavy cream

1 cup cherry tomatoes, halved

½ cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

    Season the Shrimp: In a medium bowl, toss the shrimp with olive oil, Cajun seasoning, and a pinch of salt and pepper until evenly coated.

      Sauté Vegetables: In a large skillet over medium heat, add a touch more olive oil if necessary. Sauté the chopped onion for about 2-3 minutes until translucent. Add the garlic and red bell pepper, cooking for an additional 2-3 minutes until softened.

        Cook the Shrimp: Push the vegetables to the side of the skillet and add the seasoned shrimp. Cook for 2-3 minutes on each side or until shrimp turn pink and opaque. Remove the shrimp from the skillet and set aside.

          Create the Sauce: In the same skillet, pour in the heavy cream and bring to a gentle simmer. Stir in the cherry tomatoes and allow to cook for another 2-3 minutes until the tomatoes start to soften.

            Combine Pasta and Shrimp: Add the drained fettuccine and cooked shrimp back into the skillet. Mix well to combine, adding reserved pasta water incrementally until the sauce reaches your desired consistency.

              Add Cheese and Season: Stir in the grated Parmesan cheese until melted and creamy. Taste and adjust seasoning with additional salt, pepper, or Cajun seasoning if desired.
