1 pound boneless, skinless chicken breast

1/2 cup buffalo hot sauce (adjust for spice preference)

1 cup shredded lettuce

1/2 cup grated carrots

1/2 cup cucumber, thinly sliced

1/4 cup red bell pepper, julienned

1/2 cup cream cheese, softened

1/4 cup ranch dressing (optional, for dipping)

8-10 rice paper wrappers

Fresh cilantro or parsley for garnish (optional)

Cooking oil for sautéing

Cook the Chicken: In a skillet, heat a drizzle of cooking oil over medium heat. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6-7 minutes on each side, or until fully cooked and no longer pink. Remove from heat and let cool for a few minutes before shredding.

    Mix with Buffalo Sauce: In a bowl, combine the shredded chicken with the buffalo hot sauce. Mix thoroughly until the chicken is evenly coated. Taste and adjust the sauce amount according to your preference for spice.

      Prepare the Vegetables: While the chicken is cooling, prepare your vegetables. Shred the lettuce, grate the carrots, and julienne the red bell pepper. Slice the cucumber thinly, and set all vegetables aside.

        Soften the Rice Paper Wrappers: Fill a large shallow dish with warm water. Dip one rice paper wrapper into the warm water for about 10-15 seconds, or until it softens and becomes pliable. Carefully remove and lay it flat on a clean surface.
