Buffalo Chicken Pasta Salad

8 oz elbow macaroni or rotini pasta

2 cups cooked and shredded chicken (rotisserie works great)

1 cup celery, finely chopped

1 cup red bell pepper, diced

1 cup cherry tomatoes, halved

1/2 cup red onion, finely chopped

1/2 cup blue cheese crumbles (or feta for a milder flavor)

1/2 cup ranch dressing (or Greek yogurt for a healthier twist)

1/4 cup buffalo sauce (adjust to taste)

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley or chives, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Sauce: In a large bowl, combine the buffalo sauce, ranch dressing, olive oil, garlic powder, onion powder, salt, and pepper. Whisk until well blended.

      Combine Ingredients: Add the shredded chicken, celery, red bell pepper, cherry tomatoes, and red onion to the bowl with the sauce. Stir gently to coat everything evenly.

        Mix in the Pasta: Add the cooled pasta to the chicken and vegetable mixture. Toss everything together until the pasta is fully coated with the sauce and the ingredients are evenly distributed.

          Add Cheese: Gently fold in the blue cheese crumbles, being careful not to break them too much.

            Chill: Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes to allow the flavors to meld together.
