Buffalo chicken dip has its roots in the iconic buffalo sauce, which originated in Buffalo, New York, in the 1960s. The original sauce, created at the Anchor Bar by Teressa Bellissimo, was a simple blend of hot sauce, butter, and spices, designed to complement fried chicken wings. As buffalo wings gained popularity, the sauce found its way into various culinary creations, eventually leading to the birth of buffalo chicken dip. This dip, which combines the essence of buffalo wings with creamy cheese and tender chicken, quickly evolved from being a bar food staple to a beloved dish served at home.

Ingredients

2 cups cooked chicken, shredded (rotisserie chicken works great!)

1 (8 oz) package cream cheese, softened

1/2 cup blue cheese dressing

1/2 cup buffalo sauce (adjust according to your heat preference)

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/4 cup green onions, sliced (for garnish)

Tortilla chips, celery sticks, or sliced veggies for serving

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Mix the Base: In a large mixing bowl, combine the softened cream cheese, blue cheese dressing, and buffalo sauce. Using a hand mixer or a spatula, blend until smooth and creamy.

Add Chicken and Cheese: Stir in the shredded chicken, cheddar cheese, and mozzarella cheese until everything is well combined and coated with the sauce.

Transfer to Baking Dish: Pour the mixture into a baking dish (an 8x8-inch dish works perfectly) and spread it out evenly.

Bake: Place the dish in the preheated oven and bake for 20-25 minutes, or until the dip is hot and bubbly.

Garnish: Remove from the oven and let it cool slightly. Top with sliced green onions for a fresh touch.

Serve: Serve warm with tortilla chips, celery sticks, or your favorite sliced veggies for dipping. Enjoy!
