Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup water (or plant-based milk)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

4 large tortilla wraps (whole wheat or gluten-free)

1 cup shredded lettuce (romaine or iceburg)

1 cup cherry tomatoes, halved

½ cup shredded carrots

½ cup ranch dressing (or vegan ranch)

Fresh cilantro or parsley for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone baking mat.

Prepare the Batter: In a mixing bowl, whisk together the flour, water, garlic powder, onion powder, paprika, salt, and black pepper until smooth. The batter should be thick enough to coat the cauliflower florets.

Coat the Cauliflower: Dip each cauliflower floret into the batter, ensuring it is fully coated. Shake off any excess batter and place the coated florets on the prepared baking sheet in a single layer.

Bake the Cauliflower: Bake in the preheated oven for about 20 minutes, until they start to turn golden and crispy.

Add Buffalo Sauce: Remove the cauliflower from the oven and drizzle the buffalo sauce over the baked florets. Toss them gently to coat evenly. Return them to the oven and bake for an additional 10-15 minutes, until crispy and tender.

            Assemble the Wraps:

              - Warm the tortilla wraps in a pan or microwave to make them pliable.

                - Lay down some shredded lettuce, followed by the crispy buffalo cauliflower, cherry tomatoes, and shredded carrots.

                  - Drizzle ranch dressing over the top and sprinkle with fresh cilantro or parsley if desired.

Wrap and Serve: Fold in the sides of the tortilla and roll tightly from the bottom to the top. Cut in half if desired and serve immediately for a delicious and spicy meal!
