Ingredients

1 medium head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup almond milk (or any milk of choice)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup buffalo sauce (store-bought or homemade)

2 tablespoons olive oil

1 tablespoon chopped fresh parsley (for garnish)

For the Creamy Dip:

1/2 cup plain Greek yogurt (or vegan yogurt)

2 tablespoons mayonnaise (or vegan mayo)

1 tablespoon apple cider vinegar

1 teaspoon garlic powder

1/2 teaspoon salt

1 tablespoon chopped fresh chives (optional)

Instructions

Prepare the Cauliflower:

    - Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

      - In a large mixing bowl, combine flour, almond milk, garlic powder, onion powder, smoked paprika, salt, and black pepper. Whisk until smooth.

        Coat the Cauliflower:

          - Dip each cauliflower floret into the batter, ensuring it's fully coated. Allow any excess batter to drip off before placing the florets on the prepared baking sheet.

            Bake the Cauliflower:

              - Bake the cauliflower in the preheated oven for 20 minutes or until golden brown and crispy.

                Buffalo Sauce Glaze:

                  - While the cauliflower is baking, mix the buffalo sauce and olive oil in a bowl. This will create a lighter sauce that clings better to the cauliflower.

                    Toss in Buffalo Sauce:

                      - After 20 minutes, remove the cauliflower from the oven and immediately toss the baked florets in the buffalo sauce mixture, ensuring each piece is evenly covered.

                        Final Bake:

                          - Return the coated cauliflower to the oven and bake for an additional 10-15 minutes until the sauce is slightly caramelized and the bites are crispy.

                            Make the Creamy Dip:

                              - In a small bowl, mix together the Greek yogurt, mayonnaise, apple cider vinegar, garlic powder, salt, and chives (if using). Stir until smooth and well combined.

                                Serve:

                                  - Once cooked, remove the buffalo cauliflower bites from the oven. Garnish with chopped fresh parsley, and serve them hot with the creamy dip on the side.
