Brown Sugar Pineapple Chicken

1.5 lbs boneless, skinless chicken thighs

1 cup fresh pineapple chunks (you can use canned, but fresh is best!)

1/3 cup brown sugar, packed

1/4 cup soy sauce (low sodium preferred)

2 tablespoons apple cider vinegar

2 tablespoons Worcestershire sauce

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon vegetable oil

Salt and pepper to taste

2 green onions, finely sliced (for garnish)

Sesame seeds (for garnish)

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the brown sugar, soy sauce, apple cider vinegar, Worcestershire sauce, minced garlic, and grated ginger. Whisk until the sugar is dissolved. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

    Sear the Chicken: In a large skillet, heat the vegetable oil over medium-high heat. Remove the chicken from the marinade, letting excess marinade drip off, and add it to the skillet. Sear the chicken for about 4-5 minutes on each side until golden brown. Do not overcrowd the pan; you may need to do this in batches.

      Add Pineapple: Once the chicken is golden, reduce the heat to medium and add the fresh pineapple chunks to the skillet. Pour the remaining marinade over the chicken and pineapple. Bring the mixture to a simmer and let it cook for about 10-15 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F / 74°C). Stir occasionally to ensure the chicken is evenly coated in the sauce.

        Reduce the Sauce: If you prefer a thicker sauce, after the chicken is cooked, remove the chicken and pineapple from the skillet and let the sauce simmer for an additional 5 minutes until it thickens to your liking.

          Serve: Plate the chicken thighs and top with the remainder of the pineapple chunks. Drizzle the reduced sauce over the top. Garnish with sliced green onions and sesame seeds for an added crunch.
