Breakfast Burrito Meal Prep

Ingredients
  

4 large flour tortillas

8 large eggs

1 cup shredded cheddar cheese

1 cup cooked and crumbled breakfast sausage (or plant-based sausage)

1 medium bell pepper, diced (any color)

1 small onion, diced

1 cup baby spinach, chopped

1 avocado, diced

1 teaspoon paprika

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional: salsa or hot sauce for serving

Instructions
 

Prep Your Ingredients:

    - Dice the bell pepper, onion, and avocado. Set aside.

      - If using whole sausage, cook it in a skillet over medium heat until browned and crumbled. Drain excess fat.

        Cook the Vegetables:

          - In a larger skillet, add a splash of olive oil over medium heat.

            - Sauté the diced onion and bell pepper until softened (about 5 minutes). Add the chopped spinach and cook until wilted (about 2 minutes). Season with paprika, garlic powder, salt, and pepper.

              Scramble the Eggs:

                - In a medium bowl, whisk together the eggs. Pour the eggs into the skillet with the vegetables. Stir frequently until the eggs are fully cooked and fluffy (about 3-4 minutes).

                  Combine:

                    - Remove the skillet from the heat. Stir in the cooked sausage and half of the shredded cheddar cheese until melted and evenly mixed.

                      Assemble the Burritos:

                        - Lay a flour tortilla flat on a clean surface. Spoon about 1/4 of the egg mixture onto the center of the tortilla, then top with a couple of avocado pieces and a sprinkle of the remaining cheese.

                          - Fold in the sides of the tortilla, then roll from the bottom up to form a burrito. Repeat the process for the remaining tortillas.

                            Meal Prep and Store:

                              - Wrap each burrito tightly in aluminum foil or parchment paper to keep them fresh.

                                - Place them in an airtight container in the refrigerator for up to 5 days or in the freezer for up to 2 months.

                                  To Serve:

                                    - If frozen, thaw overnight in the refrigerator. To reheat, unwrap from foil and microwave for about 1-2 minutesuntil hot, or heat in a skillet over medium heat for a crispy exterior. Serve with salsa or hot sauce on the side.
