Blueberry Sweet Rolls

Ingredients
  

3 cups all-purpose flour

1 packet (2 ¼ tsp) active dry yeast

1/4 cup granulated sugar

1/2 teaspoon salt

1/2 cup whole milk, warmed to about 110°F (43°C)

1/4 cup unsalted butter, melted

1 large egg

1 teaspoon vanilla extract

1 cup fresh or frozen blueberries

1 tablespoon cornstarch (for thickening the blueberries)

1/4 cup powdered sugar (for icing)

2 tablespoons lemon juice (for icing)

Instructions
 

Prepare the Dough: In a large mixing bowl, combine 2 cups of flour, granulated sugar, and salt. In a small bowl, dissolve the yeast in the warmed milk and let it sit for about 5 minutes until it becomes frothy.

    Mix Wet Ingredients: In a separate bowl, whisk together the melted butter, egg, and vanilla extract. Once the yeast is frothy, add it along with the wet ingredients to the dry mixture.

      Knead the Dough: Gradually add the remaining flour (up to 1 cup more, as needed) to form a soft dough. Knead the dough on a floured surface for about 5-7 minutes, or until it is smooth and elastic.

        First Rise: Place the kneaded dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm location for about 1 hour, or until it has doubled in size.

          Prepare the Blueberries: In a small bowl, gently toss the blueberries with cornstarch to prevent them from becoming too juicy during baking.

            Roll out the Dough: After the dough has risen, punch it down to release excess air. Roll it out into a rectangle approximately 14 x 10 inches.

              Add the Filling: Spread a thin layer of softened butter over the dough, then sprinkle the blueberries evenly on top. Starting from one long side, tightly roll the dough into a log.

                Cut the Rolls: With a sharp knife, slice the log into 12 equal pieces. Place these rolls cut-side up in a greased 9x13 inch baking dish.

                  Second Rise: Cover the dish with a towel and let the rolls rise again in a warm place for about 30 minutes.

                    Bake the Rolls: Preheat the oven to 350°F (175°C). Bake the rolls for 20-25 minutes, until golden brown and cooked through.

                      Prepare the Icing: While the rolls are baking, mix the powdered sugar and lemon juice in a small bowl until smooth.

                        Finish: Once the rolls are out of the oven, drizzle the icing over them while they are still warm. Allow the rolls to cool slightly before serving.
