Greek yogurt is the star ingredient in this recipe. Unlike regular yogurt, Greek yogurt is strained multiple times to remove excess whey, resulting in a thicker texture and a higher protein content. It is available in various forms—plain, flavored, full-fat, low-fat, and non-fat—allowing you to choose the type that best fits your dietary preferences.

Ingredients

2 cups of Greek yogurt (plain or vanilla-flavored)

2 cups fresh blueberries (or frozen, thawed)

1 cup granola (your choice; honey, almond, or fruit-flavored)

2 tablespoons honey (or maple syrup, for a vegan option)

1 teaspoon vanilla extract (optional)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Yogurt Base: In a mixing bowl, combine the Greek yogurt, honey (or maple syrup), and vanilla extract (if using). Stir well until smooth and evenly mixed.

Layer the Parfaits: In parfait glasses or bowls, start by adding a layer of the Greek yogurt mixture (about 1/4 cup).

Add Blueberries: On top of the yogurt layer, add a layer of fresh blueberries (about 1/4 cup). You can reserve a few for garnish later.

Sprinkle Granola: Next, sprinkle a generous layer of granola (about 2 tablespoons) over the blueberries.

Repeat Layers: Repeat the layers by adding additional yogurt, blueberries, and granola until you fill the glasses or bowls. Aim for at least two to three layers for a beautiful presentation.

Garnish: Finish with a few extra blueberries on top and a sprig of fresh mint leaves for a refreshing touch.

Serve Immediately: Enjoy your blueberry Greek yogurt parfaits right away for the best texture, or cover and refrigerate for up to 2 hours before serving.
