BLT Pasta Salad

Ingredients
  

8 oz rotini or fusilli pasta

6 strips of bacon, cooked and crumbled

1 cup cherry tomatoes, halved

1 cup Romaine lettuce, chopped

1/2 cup cucumber, diced

1/4 cup red onion, finely chopped

1 cup mayonnaise

2 tbsp apple cider vinegar

1 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

Fresh chives or parsley for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Dressing: In a bowl, whisk together the mayonnaise, apple cider vinegar, garlic powder, onion powder, salt, and pepper until smooth. Adjust seasoning to taste.

      Combine Ingredients: In a large mixing bowl, combine the cooked pasta, crumbled bacon, cherry tomatoes, chopped Romaine lettuce, cucumber, and red onion.

        Add Dressing: Pour the dressing over the pasta mixture and toss gently until all ingredients are well coated.

          Chill: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld together.

            Serve: Before serving, give the salad a gentle toss and garnish with fresh chives or parsley if desired. Enjoy!
