1 can (15 oz) black beans, rinsed and drained

1 large ripe mango, diced

1 medium avocado, diced

1 cup red cabbage, finely shredded

1/4 cup red onion, finely chopped

2 tablespoons fresh cilantro, chopped

2 tablespoons lime juice

1 teaspoon ground cumin

1/2 teaspoon smoked paprika

Salt and pepper to taste

8 small corn or flour tortillas

Optional toppings: crumbled feta cheese, sliced jalapeños, sour cream or yogurt

Instructions
 

Prepare the Black Bean Mixture: In a medium mixing bowl, combine the rinsed black beans, diced mango, diced avocado, red cabbage, red onion, cilantro, lime juice, ground cumin, smoked paprika, salt, and pepper. Gently toss all the ingredients together until well mixed. Set aside to allow the flavors to meld.

    Warm the Tortillas: Heat a skillet over medium heat. Place one tortilla in the dry skillet for about 30 seconds on each side or until it starts to puff and becomes warm. Repeat with the remaining tortillas.

      Assemble the Tacos: On each warm tortilla, spoon a generous amount of the black bean and mango mixture.

        Add Toppings: If desired, sprinkle some crumbled feta cheese, add a few slices of jalapeño for heat, or dollop with sour cream or yogurt for creaminess.
