1 cup puffed rice cereal

1 cup granola (your favorite mix)

1/2 cup unsweetened shredded coconut

1/2 cup chopped almonds (or any nuts)

1/4 cup sesame seeds

1/2 cup honey or maple syrup

1/4 cup peanut butter (or almond butter)

1 tsp vanilla extract

1/4 tsp salt

Optional: 1/2 cup mini chocolate chips or dried fruit for added sweetness

Instructions
 

Prepare the baking dish: Line an 8x8 inch square baking dish with parchment paper, allowing some overhang for easy removal later. Grease lightly with cooking spray or oil.

    Mix dry ingredients: In a large bowl, combine the puffed rice cereal, granola, shredded coconut, chopped almonds, and sesame seeds. Mix well to evenly distribute all the dry ingredients.

      Heat the wet ingredients: In a small saucepan over low heat, combine honey (or maple syrup), peanut butter (or almond butter), vanilla extract, and salt. Stir continually until everything is melted and well-combined, about 2-3 minutes. Do not let it bubble.

        Combine: Pour the warm nut-butter mixture over the dry ingredients. Stir quickly and thoroughly until everything is coated, ensuring the mixture is well combined. If using mini chocolate chips or dried fruit, fold them in gently at this stage.

          Press into the dish: Transfer the mixture into the prepared baking dish. Use a spatula or your hands (dampen them slightly to prevent sticking) to firmly press the mixture into an even layer. Ensure it's compact to help the bars hold together after cutting.

            Chill: Place the baking dish in the refrigerator for at least 2 hours to allow the mixture to set properly.

              Cut and serve: Once set, lift the bars out using the parchment overhang and place on a cutting board. Cut into squares or rectangles. Store in an airtight container for up to one week.
