1 cup semi-sweet chocolate chips

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup all-purpose flour

¼ cup unsweetened cocoa powder

¼ teaspoon salt

½ teaspoon baking powder

For the Cookie Layer:

½ cup unsalted butter, softened

½ cup granulated sugar

½ cup packed brown sugar

1 large egg

1 teaspoon vanilla extract

1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon salt

1 cup peanut butter chips

For Peanut Butter Cup Filling:

12 mini peanut butter cups, unwrapped

Instructions

Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan or line it with parchment paper for easy removal.

Make the Brownie Layer: In a medium saucepan, melt the butter and chocolate chips over low heat, stirring until smooth. Remove from heat and stir in granulated sugar, eggs, and vanilla extract until well combined.

Combine Dry Ingredients: In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder. Gradually add the dry ingredients into the chocolate mixture, stirring until just combined. Pour the brownie batter into the prepared pan, spreading it evenly.

Make the Cookie Layer: In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until fluffy. Add the egg and vanilla extract, mixing until well incorporated.

Mix Dry Ingredients: In another bowl, sift together the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture until just combined. Fold in peanut butter chips.

Layering: Drop spoonfuls of the cookie dough over the brownie batter, covering it as best as you can. Gently press the unwrapped peanut butter cups into the cookie dough, ensuring they are mostly covered.

Bake: Place the pan in the oven and bake for 25-30 minutes, or until a toothpick inserted into the brownie layer comes out with moist crumbs but no wet batter.

Cool and Serve: Remove from the oven and allow to cool in the pan for at least 15 minutes. Once cooled, slice into squares and serve warm for the gooey goodness!
