2 cups all-purpose flour

1 ½ cups granulated sugar

½ cup unsalted butter, softened

1 cup buttermilk, at room temperature

3 large eggs, at room temperature

1 tablespoon vanilla extract

1 tablespoon baking powder

½ teaspoon baking soda

½ teaspoon salt

1 ½ cups fresh strawberries, hulled and chopped

1 cup heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract (for whipped cream)

Fresh strawberries, for garnish

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

    Prepare the Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy (about 3-4 minutes). Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

      Mix Dry Ingredients: In another bowl, sift together the flour, baking powder, baking soda, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the butter-sugar mixture, alternating with the buttermilk. Begin and end with the flour mixture. Gently fold in the chopped strawberries.

          Bake the Cakes: Divide the batter evenly between the two prepared pans. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Once done, let them cool in the pans for 10 minutes before transferring to a wire rack to cool completely.

            Make the Whipped Cream: In a large mixing bowl, combine the heavy whipping cream, powdered sugar, and vanilla extract. Whip until soft peaks form. Be careful not to over-whip; you want a soft and spreadable consistency.
