4 medium-sized beets, scrubbed clean

1 tablespoon olive oil

Salt and pepper, to taste

2 cups arugula or mixed baby greens

8 oz burrata cheese

1/4 cup toasted walnuts, roughly chopped

1/4 cup pomegranate seeds

2 tablespoons balsamic glaze

Fresh herbs for garnish (basil or mint)

Instructions
 

Roast the Beets: Preheat your oven to 400°F (200°C). Wrap each beet individually in aluminum foil, drizzle with olive oil, and sprinkle with salt and pepper. Place them on a baking sheet and roast for about 45-60 minutes, or until they are tender when pierced with a fork. Let them cool slightly before peeling and slicing into wedges.

    Prepare the Greens: While the beets are roasting, wash the arugula (or mixed greens) thoroughly and pat them dry. Place them in a large serving bowl.

      Assemble the Salad: Once the beets are cool enough to handle, slice them into wedges and arrange them over the greens in the bowl. Tear the burrata into pieces and place it on top of the beets.
